I created this recipe back in the 90's. I was always buying provolone cheese for "sandwiches". I would have it sliced extra thick at the deli and use it as my "bread". I figured why not substitute it for the bread crust in a pizza.
Line a small pan with 2 layers of provolone. Spread a couple of spoonfuls of pizza sauce. Now cover with shredded moz and your favorite meaty toppings. Feel free to load up on pepperoni, bacon, ham, ground beef etc. Sprinkle a small amount of diced onion, mushrooms and peppers if you like.
I used to put this under the broiler for about 10 mins or until the cheese was melted. Now I make two half pizzas in my GT Express cooker. It takes about 5 mins to crisp up the pepperoni.
Let the pizza sit for about 10-15 mins to cool and set then serve. This will not cut neatly so you will probably have to spoon it into the dish. I try to slide it onto a plate and find that works best.
I found cheese molding in the fridge last night so I put a pizza together. It was so hot that I got sick while cooking it and ate it cold a few hours later. Still good. I also made up some tuna salad last night which I ate spread on celery sticks for supper today. Actually I only ate one meal today, the tuna-celery sticks and a bag of Emerald Cocoa Roast Almonds (100 cal, 2 net carbs). It was too hot for anything else.
I haven't been checking my weight too much lately but I weighed tonight. I am still at 350 but my clothes are much looser and friends keep saying I look much thinner so I don't know. I know that, except for the heat misery, I feel better and clearer mentally since I changed my diet. I may have to hunt for a scale at a store in town next week.
