but it is not helping LOL. 46 days and no end in sight!!!!! On average we have about 15 days of above 90 degree temps each spring and summer. Last year we had 9. Even worse they are not just low 90's but mid to high 90's and high humidity giving us heat indexes of plus 100 degrees. With no a/c I am sleeping during the day and getting up in the evening. Even that is not helping much the past two weeks. It is not even cooling down at night *sigh*.
We lucked out with some rain last night that cooled things down for about 3 hours. I was able to heat some water and wash dishes but that left me wrung out. I am still trying to stay low carb but I have been too hot to cook most of the time. I had several cans of SF applesauce and some low sugar fruit cups from the low fat days. I tossed them in the fridge and have been pulling them out for my breakfast and suppers.
It is a good thing I gave up sodas, I wouldn't have been able to haul enough home. I go through 6-10 trays of ice each day plus refill and use about 15 water bottles each day. I can't seem to get enough. Oh and Miss Kitty and the dogs expect a couple of ice cubes in their water each time I go into the kitchen LOL.
I was already refreshing it with cool well water several times a day. Well, Miss Kitty came over one day and dipped her head in my insulated mug that was filled with ice and water. I had to fight her to get it away and give her a cup with ice and water. Now I have to fix her a cup of ice water every time I go to the kitchen to get one for me LOL.
Here's an interesting note - canned Fr. cut green beans have very little flavor. During that cool spell yesterday I decided I wanted some spaghetti and was very hungry. I cooked a few hamburger patties, diced them up and added some cheese and a few tablespoons of Ragu garden delight spaghetti sauce. I rinsed a can of the beans and tossed them in. It actually didn't taste much different than having the real thing - just a few more veggies and I enjoyed it.

Chocolate Milkshake - One Carb
I have been staying faithful to the low carb plan but the scales are not being kind. Yesterday they said I had gained 8 lbs!!!! However I know my clothes are hanging loose and a friend came to visit today and SWEARS I look thinner to her. I hadn't seen her in a couple of months so that was great to hear.
I came up with an awesome low carb treat to get past my chocolate cravings. Hershey's cocoa powder is only 3 carbs per tablespoon but 2 gms are fiber so you only count it as 1 carb. Heavy whipping cream is zero carbs.
Monday I tried making some cold chocolate milk but the powder stayed lumpy.
Wed I decided to give it another try. I put almost 2 cups of cream into a large plastic "glass". I added 1 1/2 tbsp of cocoa and 2 teas Splenda. I decided to try mixing it with my stick blender. I was playing around with the blender and before I realized it I had an entire cup of fluffy chocolate whipped cream!!! It tasted pretty good but was a little thicker, a little less sweet and a little less cold than I would have liked but it was still pretty awesome tasting.
Well I tried again last night. 2 cups cream, reduced to 1 tbsp cocoa, increased to 3 teas Splenda, tossed in two ice cubes and blended. I hit the ice cubes a little at a time to break them up and then blended the entire cupful but not as long as before. A little too sweet but otherwise perfect. Tasted like a big frothy chocolate milkshake. Yum!!!!
This combo with some vanilla and half and half is supposed to make ice cream but I have misplaced the recipe. That will be my next experiment since we are still in the middle of a heat wave and I am melting.

How to Weigh Yourself LOL
Things here continue the same, no loss, no gain. My electric bill is staying around $70 right now so I have just enough to stay on low carb for another couple of months. When winter gets here I will have to rethink it because it will probably be lots of pasta, potato, rice and bread stretchers to get through the high heating bill months.
In the meantime I am mostly enjoying eating low carb. I do have to admit I could use some variety so I have been plundering the LC cookbooks for some recipes. Mostly soups and desserts. Soups for fillers to stretch the LC foods. Desserts because I absolutely must have chocolate at least once a week or I become a very cranky old biddy. I am even happier if I can also have ice cream a few times a week. If the recipes turn out well I will post them here. My favorite places to get LC recipes is LowCarbLuxury but I just discovered a Google group that has collected two great LC cookbooks. The list below was also collected by them at alt.support.diet.low-carb:
The Best Way to Weigh Yourself

To all those people who measure their progress by weighing themselves, here is how to do it: Use the same scales, every time. Take your weight at the same time of day, EVERYDAY. That way, you get a seven-day moving-average, which smoothes out abnormalities
You forgot to say don't eat before you weigh yourself.
Take all the clothes off so you don't weigh them.
Potty first.
And suck in as you step on the scale.
It won't make you weigh less but it does make you LOOK skinnier.
And, most important, kinda ease your way onto the scale. Sneak up on it. You don't want to startle those numbers into doing something bad.
The proper small-animal sacrifice beforehand doesn't hurt either........
as long as you can eat it afterwards. :-)
Also shower first to rid yourself of that heavy "dirt"… Dry body and hair vigorously to avoid unnecessary water weight. Be sure to clean water and wax out of ears. Brush lint and cat hair off scale
Weigh WITH your clothes.Then frown, take off your shoes and try again. Frown just a little. Take off your pants, and try again. Nod to confirm that the number looks better. Take off your shirt and weigh again....Take off your socks and underwear....weigh again. Smile and affirm that even if it is heavier than yesterday, it is still lighter than 5 minutes ago!
How To Lie To The Bathroom Scale
Weigh yourself with clothes on, after dinner... then again in the morning, without clothes, before breakfast, because it's nice to see how much weight you've lost overnight.
When weighing, remove everything, including glasses. In this case, blurred vision is an asset. Don't forget the earrings, these things can weigh at least a pound.
Use cheap scales only, never the medical kind, because they are always five pounds off...to your advantage.
Always go to the bathroom first.
Stand with arms raised, making pressure on the scale lighter.
Don't eat or drink in the morning until AFTER you've weighed in, completely naked, of course.
Weigh yourself after a haircut, this is good for at least half a pound of hair (hopefully).
Exhale with all your might BEFORE stepping onto the scale (air has to weigh something, right?).
Start out with just one foot on the scale, then holding onto the towel rack in front of you, slowly edge your other foot on and slowly let off of the rack. Admittedly, this takes time, but it's worth it. You will weigh at least two pounds less than if you'd stepped on normally.
LOL my favorite is the advice to sneak up on the scale LOL.
