Chocolate Milkshake - One Carb

I have been staying faithful to the low carb plan but the scales are not being kind. Yesterday they said I had gained 8 lbs!!!! However I know my clothes are hanging loose and a friend came to visit today and SWEARS I look thinner to her. I hadn't seen her in a couple of months so that was great to hear.

I came up with an awesome low carb treat to get past my chocolate cravings. Hershey's cocoa powder is only 3 carbs per tablespoon but 2 gms are fiber so you only count it as 1 carb. Heavy whipping cream is zero carbs.

Monday I tried making some cold chocolate milk but the powder stayed lumpy.

Wed I decided to give it another try. I put almost 2 cups of cream into a large plastic "glass". I added 1 1/2 tbsp of cocoa and 2 teas Splenda. I decided to try mixing it with my stick blender. I was playing around with the blender and before I realized it I had an entire cup of fluffy chocolate whipped cream!!! It tasted pretty good but was a little thicker, a little less sweet and a little less cold than I would have liked but it was still pretty awesome tasting.

Well I tried again last night. 2 cups cream, reduced to 1 tbsp cocoa, increased to 3 teas Splenda, tossed in two ice cubes and blended. I hit the ice cubes a little at a time to break them up and then blended the entire cupful but not as long as before. A little too sweet but otherwise perfect. Tasted like a big frothy chocolate milkshake. Yum!!!!

This combo with some vanilla and half and half is supposed to make ice cream but I have misplaced the recipe. That will be my next experiment since we are still in the middle of a heat wave and I am melting.
