Holding it together .....so far

but I haven't pulled out the chocolate pecan pie yet LOL.

I did splurge on two pre-made pies - the CP and a pumpkin. I attacked the CP earlier this week and ate a couple of pieces Mon night. I had intended to just have one piece but I had 3. I had PLANNED to use half the pies for Thanksgiving and freeze the rest for Christmas if I didn't have company. Well of course none of that is going to happen. I will finish off the pies over the next few days but I kind of knew that was going to happen if I am honest with myself. Especially when I discovered the pecan pie was CHOCOLATE pecan LOL.

I wasn't able to buy a ham but did get a turkey. I boiled some chicken breasts Wed night to make chicken broth. I decided to go ahead and make the dressing and cranberry sauce so I had a serving of each with a chicken breast. I also cooked a pot of cabbage.

Thurs I baked bread in anticipation of turkey sandwiches. I chopped up two of the chicken breasts into a delicious salad - celery seed, mayo, grapes and raisins. Later in the evening my bread finished about the same time I was going to fix some cabbage and a chicken breast so...... for dinner I had 4 crisp, hot bread crusts cut from the fresh loaf and forgot about the chicken. They were awesome and I was stuffed so I headed to bed.

After a 5 hour nap I got up around 1am and figured I better make another loaf of bread. I also made a pot of mashed sweet potatoes. For most of my life I thought I hated sweet potatoes because they were always served with marshmallows or syrup - gag!!!!! I only discovered the mashed a few years ago. I just peel and dice them into large chunks, add a can of chicken broth to the pot, bring to a boil then lower to med and let steam for about 20-30 minutes. I don't want them mushy, I want some "chunk" and fiber to them. I hand mash with a fork and add a little butter - awesome!!!!! I had a small bowl mixed with chunks of the last chicken breast this morning and loved it.

I finally got to bed about 8a and got up at noon when a friend called. I had the turkey ready to go so I just popped it in a few minutes ago. I plan to have a true Thanksgiving spread this evening, will heat leftovers tomorrow then go to sandwiches. By Mon I hope to boil the carcass, make homemade egg noodles and turn it into turkey soup.

Who knew my physical problems slowing me down to cooking bits of a meal day by day would also be good for dieting. I can't pig out on tons of stuff because I am making it one meal at a time LOL.
