The Heat Continues

It is causing a big problem with my menu prep. I am on a limited income so staying on low carb requires loading up on a lot of eggs. I had planned eggs and bacon or sausage for my breakfasts most of the month but this blistering heat causes my stomach to roll when I even consider eggs. I had also bought some deli meat, low carb wraps and inexpensive ham bits for lunches.

I spent the first week eating lots of deli meats dumped into salads. Week two it was more salads and I cooked meat in the middle of the night, cooled it and dumped it into more salads. I ran out of salad fixings last week so it was mostly fruit cups and yogurt left over from last month. I have been stretching one bag of burgers through the past week and have 4 more days until grocery day.

Note: I bought one of those egg cookers with the domed lid. It works really great. It does 7 boiled egg, 4 poached eggs or steams veggies. I figured out the perfect amount of water to boil my eggs so they aren't runny but they are still dark yellow on the inside. I love them. I made a batch last night and am hoping I will be able to stand some tuna or egg salad tomorrow if everything is pre-chilled.
